Our Story began in 2012 when we first opened as a Mediterranean restaurant called Samovar in Anjuna, Goa. The restaurant was set up by a contributor and volunteer of the Samarpan Foundation with the idea to donate all profits from the restaurant to the foundation.
A year later the beautiful Filomena Cottage, built in 1928 at the quiet end of the Baga Creek was made available to us by the Fernandes family (who run the Goan chapter of the foundation and also own the Go with the Flow brand) as a new home for the restaurant. We decided to ‘Go with the Flow’ and relocate the restaurant and why not just change the name to the same?
Chef Guto, a Brazilian, came on board and ‘Go with the Flow’ became an instant success as a Brazilian themed restaurant and also ‘the’ place to be seen in Goa. After 3 successful seasons, numerous awards and accolades Guto moved on and South African chef, Stéfan Marais took over in June 2016.
With the restaurant having had strong Mediterranean and Brazilain influences before, Stéfan and the team decided to keep the most popular and best dishes and add other global influences from his work experience and travels across Africa, Europe, the Middle East and Asia. His focus from the beginning was training the local staff to understand diffrent cuisines and how flavours and textures combine to create magic and teaching the team how to produce high quality international standard dishes.
Flow’s new menu focussing on bold flavours and a more relaxed, smart-casual and family friendly atmosphere was an instant success seeing Stéfan and his kitchen team being awarded the Goan Foodie ‘Chef of the year’ award in April of 2017, a mere ten months after his arrival followed by Times Food ‘Chef of the year’ less than a year later in February 2018.

Go with the Flow has always been known for the excellent team of staff – in the front of house, bar as well as kitchen. The restaurant is owned by local Goan sisters, Jeshua and Gizella Fernandes. The restaurant is managed by a dedicated team of hospitality industry professionals. South African Chef and hospitality consultant Stéfan Marais heads up the restaurant with Dildar Hossain leading the kitchen team and Joseph Fernandes at the helm in the front of house.
Stéfan Marais and Dildar Hossain
Chef Stéfan Marais hails from Cape Town, South Africa where he was born into a foodie family growing up on a boutique hotel property – the hospitality industry is truly in his blood. He trained in the UK and has worked in South Africa, the Middle East and now India. His food is accessible, fun and always bursting with flavour. Stef, as he is known to restaurant regulars and friends, is an avid nature lover and takes the environment into consideration at all stages in putting a meal together. When not in the kitchen he can either be found in the garden or out in nature somewhere.
Head chef, Dildar Hossain is from West Bengal and is one of the original family members, having been at the restaurant since day one.
He started his career training at the 5 star Royal Orchid hotel group in Mumbai as well as the Hotel Tunga holding various positions in the group before relocating to Goa. His hard work, dedication, and skill have paid off seeing him move up the ranks and taking charge of the day to day kitchen operations.
He has a dry sense of humour, a sneaky smile, and an incredible work ethic. His wife, Rina is our cashier and their little boy, Rizwan is our restaurant mascot.
Goan born and bread Joseph Fernandes is the man with the golden smile in the front of house that takes care of all our guests’ needs. His many years of industry experience working in Goa and abroad has led him to the point of leading the front of house team at Go with the Flow. He enjoys attending church on Sundays, football and of course serving his guests at Flow. Joseph is supported by a dedicated and friendly team in the front of house that make sure our guests are always served at a very high standard
